Vegetable Stock


Onion, large, chopped in small pieces - 1
Potato, large, chopped in small pieces - 1
Cabbage, chopped - 1/2 cup
Carrot, cut into small pieces - 1
French beans, cut into small pieces - 4-5
Garlic, crushed - 1/2 tsp.
Ginger, crushed - 1/2 tsp.
Salt - 1/2 tsp.


  1. Put all ingredients in a pan. Add 8 cups of water. Bring it to boil and then allow to simmer.
  2. Leave it on low heat for about 15-20 mins. You may add a little water if the stock quantity becomes too low.
  3. Strain the mix so that only clear vegetable stock remains.
  4. Store ths stock in freezer. Use as needed.
  5. Discard all vegetables.

Additional information

Note: Depending on personal preference, mushrooms, peas, corn and green peppers can also be used.
